Leftovers Revamped

Published on November 25th, 2017

And just like that Thanksgiving is over, and all those leftovers have taken over your fridge. Don’t get me wrong, leftovers are great, but after having Thanksgiving leftovers for three meals straight you probably never want to see a turkey again until next Thanksgiving.

But, what can you do with all those leftovers?? At this point there aren’t any other relatives to hand off leftovers to and throwing them away is not an option either. But what about revamping your leftovers and making something yummy you won’t get tired of eating?

With a quick search on Pinterest, you’ll find tons of options. Everything from easy turkey wraps, to Shepard’s pie featuring stuffing crust and mashed sweet potato (which in my opinion was a little too creative). With an attempt to make your life a little bit easier, I’ve compiled some of my favorite recipes featuring only things you can find in your fridge post-Thanksgiving.

Your first option is a spin on a tradition BLT(T), a bacon lettuce tomato turkey sandwich that is. Add some avocado, use a panini press and bamn you can not only use some of that left over turkey, but it will give you a break from all that turkey and gravy you have been eating since Thursday.

Turkey Salad

Your second option is a spin on a favorite side dish, turkey salad. Just use your favorite chicken salad recipe and substitute leftover turkey for the chicken. Just remember to pull apart all the turkey pieces and remove the skin, and just like that you have a refreshing dish to go along side any week night dinner. You could even take it to school and have it for lunch.

Loaded Mashed Potato Balls/Potato Puffs

Up next we have loaded mashed potato balls. Take some of your leftover mashed potatoes, throw in some cheese, chives and bits of bacon and cover with bread crumbs for an appetizer fit for any get together. If you don’t want to go through the hassle of making the potato balls, just use a muffin tin and scoop in the cheese-potato mixture and bake and you have mashed potato puffs.

Turkey Noodle Soup

For those of you barring the cold north east winters, try making turkey noodle soup with some of your leftovers. Just use your favorite chicken noodle soup recipe and substitute the turkey for the chicken.

With just a little bit of creativity there are a thousand and one ways of making Thanksgiving leftovers into something new and delicious. The best part is that there is no need to waste any of those leftovers in your fridge! These are just a few options on how to revamp your leftovers and personally, I don’t think there is anything better then spending the last few days of break getting creative with your family, making recipes everyone is sure to enjoy.
